 Cooking Instructions 

Stirred Noodle :
1.Pour in water and bring to a boil,add Guan Miao noodles, bring to a boil again,simmer over low heat for 3 minutes then drain of water.
2.Stir with favoured sauce such as sesame sauce, sate sauce or oyster sauce, add with cooked vegetables, meat or seafood,serve.

Noodle soup
1.Pour in water and bring to a boil ,add Guan Miao noodles, bring to a boil again,simmer over low heat for 3 minutes.
2.Add seasoning and flavoured vegetable,meat or seafood , bring to a boil again , serve.

关庙面制程强调纯天然,于户外阳光下曝晒至少2、3天。

晒过的面条像小孩的皮肤,嫩嫩胖胖的,带有小麦香味,

这是一般机器烘干的面所没有的。

提到关庙细面“久煮不烂”的秘诀,主要是师傅在揉面的过程中能够抓出适当筋度,并且给予充分的时间醒面(自然发酵)

加上辗压扎实,这样一来,即使煮的时间稍久一点,吃起来仍然Q弹有嚼劲

晒好的面因为完全干燥,在不添加防腐剂的情况也能于干燥环境中长期保存。

煮食方法

水滾后放入面条,滾至約三至四分钟即可捞起,可用于拌面、卤面、涼面、湯面等,变化出许多面食料理。
